Antioxidant, antimicrobial, and preliminary phytochemical constituents of fermented seeds of <i>Trigonella foenum-graecum</i>

Trigonella foenum-graecum (Fenugreek) is among the earliest plants used as spices and medicine worldwide. This study determined antioxidant activities of fermented seeds T. by methods, ABTS 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonicacid) DPPH (2,2-diphenyl-1-picrylhydrazyl). The phytochemical compounds, pH, in vitro agar well (antimicrobial) assay sample was tested at three concentrations (100%, 50%, 25%) against selected pathogens (Staphylococcus aureus, Salmonella typhi, Escherichia coli) diffusion method.
